Two YUMMY Fourth of July Recipes!

These are two MUST TRY recipes.
One, I've never made until yesterday.
One, is tried and true.

I am just love, love, lovin the fresh veges this year.
They are just so succulent, juicy, and in perfect form.
Much more than years past.

"W" and I have the honor of spending the 4th this year with some of our wonderful friends at their lake home.
Their home is surrounded by not only a beautiful lake, but also mountains.
I honestly cannot wait!

So.  I wanted to try my hand at some homemade salsa.

Here we go!
start with these ingredients.  BTW, that is a jalapeƱo pepper.

here is a trick to peel tomatoes.  Boil for about 1 minute.  The peels just slide right off

perfectly


cut a (ripe) avocado in half lengthwise.

to remove seed, cut into the seed with a large knife.  It pops right out!

cut in to small cubes

take fresh garlic

and use a garlic press

like this

add one med size chopped red onion

cut a jalapeno in half.  Remove seeds and chop into small pieces.  Be sure NOT to touch your eyes after you do this.  If you do you WILL regret that decision.

If you have a Vitamix, dump a couple of tomatoes, more onions, a few cloves of garlic and a handful of cilantro into that mixer.

Mix about 30 seconds on high


add 1/2 tsp cumin 


If it is too runny, like mine was, add more chopped tomatoes, and chopped cilantro.  Also add sea salt and pepper.  Serve with chips or over your favorite grilled chicken!  Let it cure overnight in the fridge.  This stuff is a MUST try!!!!

 Now on to a yummy lunch recipe!
I've been making this for years.

Four Cheese Past Salad

Here is what you need to begin with
Three Cheese Tortellini
you can purchase this at any grocery store.
You will need 2 packages of this.

Boil for about 8 min.  (I boiled mine too long, don't boil longer than 10 minutes)

Drain the pasts (see how I overcooked?) oops.

use these ingredients (those are walnuts)

first dump in the sun dried tomatoes

add about a cup of walnuts

and about 2/3 cup of chopped red onions

a jar of chopped green and black olives

one half chopped green pepper

about 3 cloves of smashed garlic

mix all of that together

dump the pasta on top

and mix away!

Now, for some reason I didn't get pics of the dressing.  You are going to pour 1/4 cup balsamic vinegar on top and 1/2 cup extra virgin olive oil.  Mix well and add sea salt and pepper the taste.
Let this marinate over night.
Your company will LOVELOVELOVE you!!!!
(just remember not to overcook the pasta)
